Colombian Beans with coconut rice - Gluten Free

I came across this recipe last week when I was asked to make the food for a dinner party. One of the guests was from Columbia so my friend Allison suggested this recipe.
This is a great recipe for a dinner party specially if you have many guests ( I had 7 people including children!). Adults love it because it's healthy and tasty and kids like it because they find it funny to play with the beans!
This recipe serves 4 people - get 500 gr of black beans. Soak them over night and on the day of your party, boil first for 45 minutes - now put aside.

Fry a large white onion in a dash of olive oil and a couple of garlic cloves. Add a couple of bay leaves, one tea spoon of ground cumin, a couple of tea spoons of white wine vinegar and add 2 tablespoons of brown sugar (or demerara sugar).
Chop 3 peppers in cubes (1 green, one yellow and one red) - now add to the pan and cook for a couple of minutes. Now add the black beans and 2 glasses of white wine (or enough to cover the beans).
Let it cook for about 40 to 50 minutes on a low heat. I like a bit of a kick on my black beans so I added a piri piri but you can also add a red chili with seeds.

Once the beans are ready, prepare your coconut rice - it is very simple and you can use this rice in other meals!
On a pan, add 2 table spoons of peanut oil (in some shops it's called ground nut oil). When the oil is hot, add one cup of long grain rice  and fry it for a couple of minutes. Now add one cup of coconut milk and let the rice cook for about 10 minutes (or follow the instructions in the package).
