Aubergine courgette and goats cheese salad - Gluten Free

This is a great summer holiday salad as it involves very little cooking.


1 aubergine 
1 courgette
1 can of butter beans
handful of sun dried tomatoes
fresh mint
1 lemon - zest and juice
2 tbs olive oil
goats cheese 
Salt & pepper
Handful of green olives

Slice the courgette and aubergine and grill for 7 minutes each side - set aside to cool.

Mix all vegetables on a beautiful plate and grate half a lemon to the mix.  Mix the olive oil and the juice of half a lemon for the dressing and serve!
