Red lentil soup - Gluten Free

This is one of my favourite soups ever, specially if I'm feeling a little under the weather... works like medicine!

1 red onion
2 tbsp olive oil
1 cup of red lentils
500 ml of water
Handful of fresh coriander
1tbs dry ginger or 2 cm of fresh ginger thinly sliced
1 can of tomatoes
1 yellow pepper
2 medium carrots cut into little cubes
1 tbs turmeric
salt to tate
1 red chilli or chilli powder to taste
1tsp cumin

Fry the onion and the carrots together until soft. Add the spices and the tomatoes. Then the water, the pepper, and the lentils. Let it simmer for 20 minutes and add the coriander jus before serving.
