Pork Strogonoff - Gluten free

This is a great weekday meal as it's very quick to make, comforting and not that expensive.
Serves 4 and it's about 520 calories per serving

400gr pork fillets chopped in cubes
170ml single cream
1 medium leek
1 tsp of sweet smoked paprika
Salt & pepper ( i used a mix of peppercorn but black pepper is also fine) to taste
2 tbs olive oil
1 cup to serve (i used long grain this time, but it goes very well with brown rice or wild rice)
400 gr chestnut or button mushrooms.
1/2 white wine

Prepare all ingredients first - slice the leeks about 1cm thick, mushrooms in slices, and pork in cubes.
On a separate bowl, mix the pork with the paprika and leave for a few minutes. Fry the leek until it starts getting a little brown (but not burnt!) this will give flavour!
Set the leek aside. In the same pan, add 1 tbs of olive oil and fry the the pork for about 10 minutes until brown. now set aside. Leave any fat from the pork on the pan and cook the mushroom on it. The mushrooms will absorb all these juices. Leave for a few minutes and now add all other ingredients. Add the white wine and simmer for a few minutes. Lastly add the single cream and simmer for a few minutes on a low heat. Season to taste and voila! Enjoy!
