Raquel's Chicken Stew with pasta

The only thing that keeps me  from becoming vegetarian is that I love chicken! I love it grilled, roasted, fried, boiled, strewed, you name it! ( so sorry vegetarian friends!!)
I make this strew very often at home and i've been told it tastes very "european"... whatever that means...
Chop your chicken in pieces but do not remove the skin - it's going to give that special taste to the gravy!
Chop a red onion in cubes, chop a hand full of celery and half a fennel - don't forget to take the outside leaf as it's very stringy when you cook it. Throw the onion, the celery, the fennel and one bay leaf in the casserole with live oil and a pinch of salt and pepper.
Fry for a few minutes and add the chicken. Let the chicken get a little colour and add half a glass of white wine. If you don't have white wine, add 2 table spoons of white or red wine vinegar.
Add chopped tomatoes ( one can of chopped ones or 5 medium tomatoes chopped) and a pint of water - don't add stock!
Let it cook for about 40 minutes. Once the chicken is cooked, boil pasta on the side and add to the chicken,
It's as yummers as it can get! For vegetarian friends, you can cook this recipe without the chicken and it's also a great meal! Enjoy!
