Stringless bean Soup - Gluten Free

My dad is probably the best cook in the world. Sorry Michael Roux Jr but this is the truth! My mum cooks very well too but my dad usually commands the kitchen.He makes the most  amazing soups, curries, fish, amazing everything!If he's cooking, then you can be sure you will leave with  happy tummy!
As I said, he's a little bit of an expert in soups. From very traditional vegetable soups to the most wonderful elaborate fish soups!
This is a simple, yet delicious and nutritious one!

Ingredients:

2 medium potatoes (peeled and cut into cubes)
4 medium carrots (peeled and cut into cubes)
2 tbs olive oil
1 onion (peeled and but cut into cubes)
salt to taste
200 gr stringless beans (cut into small pieces)
2 pints of water

In a casserole add the potatoes, carrots and onion, salt and olive oil and water. Bring to boil and cook for 20 minutes (lid on) or until all vegetables are mushy. Blend in a food processor and add the beans. Cook for 10 minutes and it's ready to serve!
