Banana and Cinnamon muffins - Gluten free

You have probably noticed i love making banana cake... or making cakes with bananas... i guess... as I said in a recent post, i do buy more bananas than i can actually eat...and they go brown... perfect for baking... this is a new banana muffin recipe I tried this morning. A friend of mine suggested to add a part of ground almonds to the gluten free flour to make the cakes lighter, and it really works - thanks Rosie!
This is great for a mid morning snack or afternoon tea. Add a little greek yogurt for extra yumminess!

Makes 12

2 eggs
200gr self raising flour
30 gr ground almonds
3 tbs milk
3 very ripe bananas (brown)
1 tsp baking powder
175 gr sugar
100 gr butter (soft but not melted)

Pre heat the oven on 170 FAN/gas mark 5.
Add the butter and sugar and beat until creamy - about 4 minutes... the creamier and lighter it gets the lighter your cake will be.
Followed by the eggs, milk, bananas and dried ingredients.
Bake for 25 minutes.
