Tomato Rice - Gluten Free

Tomato rice was the first meal I ever made! I must have been 9 years old and saw my dad making it and copied a few days later. It's so easy to make and so versatile! It's great as a vegetarian/vegan meal accompanied by a tomato salad or green salad.

(makes for 4 people)

1 medium onion
1 can of tomatoes
1 bay leaf
Salt and pepper
Olive oil
1 cup of long grain rice or brown rice
1 pint of water

Salte the onion with the olive oil and bay leaf; as soon as it starts 
browning, add the rice and cook for a couple of minutes. At this point, add the tomatoes, water and season. Cook the rice according to the package and you're ready to serve!
